Hard drives seem to be the universal solution. I wouldn't say they work 100% of the time but in my experience they have been more interchangeable than USB sticks and more reliable than CF. I had a CF card go bad just sitting on the shelf and have had to format them from time to time for inexplicable...

It's always a pain using the on board P2K diagnostics with the glass off. Would there be a way to hook up a second monitor to directly read the onboard diagnostic screens?

It's pretty similar but there might be a couple of subtleties. Now, if you yank the glass and put the ball in the shooter lane the ball *automatically* shoots back into play and it should wait until the player shoots the ball to continue.
